To revolutionise the takeaway sushi experience in London.
The speed of a grab-and-go spot, but with the passion, technique, and attention to detail of a high-end restaurant. No plastic trays. No lifeless sushi. Just proper craftsmanship, great flavour, and warm service every single time.
OUR FOUNDERS
Saltwater is brought to you by the Founders of Milk Beach - a modern Australian restaurant in Soho, and Bar Blondie - a wine bar and restaurant in Queen’s Park.
OUR FISH
We have partnered with True World Foods, a best-in-class fish supplier who supply some of the most premium restaurants in London, including Nobu, Roka, Zuma, A Wong, Barafina and Sabor. This decision was not only made on the basis of the world class sushi grade fish they deliver but also the way they run their business. They are accredited by Marine Stewardship Council (MSC) and Agricultural Stewardship Council (ASC) reflecting their commitment to working with a sustainable supply chain. Most of our Salmon is sourced from HiddenFjord in the Faroe Islands where salmon is wild-farmed for amazing taste and texture. Our bluefin tuna is from Balfego in Spain who are at the forefront of sustainable tuna farming and certified B Corp.
OUR RICE
After tasting and testing countless rice suppliers, we selected Korean Seomjin River premium short-grain rice from the Hadong region, known for its soft, sticky texture and clean flavour, attributed to the clean water, rich soil, and climate of the Seomjin River Valley. The substantial day and night temperature variations of the valley result in rice starch granules that are tightly packed, giving the cooked rice a prized shiny, soft, and sweet taste.
OUR PACKAGING
Sushi QSR is one of the largest contributors to plastic waste in the hospitality industry, so we decided to do things differently. We’ve developed a range of bespoke packaging with Notpla, a brilliant Earthshot Prize winning UK business making packaging out of cardboard and seaweed. Australia has banned plastic soy fish droppers - and so Saltwater has too. We have partnered with Australian designers Heligraf on a new fully compostable soy dropper.
We are proud to to say that Saltwater is plastic free.
